This relatively unknown cut of beef (although gaining popularity) is the result of research by teams from the University of Florida and the University of Nebraska as part of the Beef Checkoff program (https://www.beefboard.org/) . The goal was to look for additional opportunities to add value to beef through the development of new beef cuts... clearly, they succeeded.
Flat Iron steaks are beautiful to look at, they have an appealing texture and a decent amount of marbling.
The flat iron might not get nearly as much attention as rib-eyes and strips, but it’s a quality cut of meat, lean and usually inexpensive enough for a nice weeknight dinner
GRANDMSATER AKAUSHI BEEF
This is Grandmaster Akaushi Beef, premium American Wagyu or Wagyu Cross F1 which is produced from cattle that are between 24 and 30 months of age, with minimum feeding of 300 days. All cuts are wet aged for a period of 30 days.
Moist aging helps these cuts in preserving moisture (each steak is wet-aged in a bag). With NO hormones or antibiotics, these steaks are high in monounsaturated fats and Oleic Acid, as well as having a BMS7+ marbling score. They are DNA verified for individual pedigree.
