Black COD is also known as Sable Fish and it is sourced from the Pacific Northwest (from central Baja California to Japan and the Bering Sea.).  It boasts white and fatty meat, with a velvety texture and buttery flavor which is why in some cases it also goes by the name "butterfish". 

Black COD is NOT a COD. this deep-sea fish, which can live up to 5,000 feet (1,500 meters) below the sea, is not part of the cod family.

We recommend smoking, it won’t lose its flavor or texture in the process. For this same reason, sablefish are ideal for making dips, mousses, and fillings. That said one of my favorite things is to pan-roast it.
